Tarragon Potato Salad

Recipe Summary

A great alternative to traditional potato salad. Tarragon Potato Salad is fantastic cold or warm. Make plenty, since it gets better with age.

Recipe makes 8 servings (180 calories per serving)

Ingredients

2 pounds tasty potatoes (fingerlings work nice, or yellow finns)

1/3 cup olive oil
3 T balsamic vinegar
1 T Dijon mustard
1 t salt
1/2 t kelp
pinch of black pepper

1 T chopped tarragon (in a pinch you can use 3/4 t dry
1/4 cup minced parsley
1 bunch green onions minced

Preparation

Boil the potatoes until soft - don't overcook. Let them cool a little and cut into 1/4 inch slices while they are still warm.

Combine oil, vinegar, mustard, salt, kelp, and pepper and whisk together.

Add the chopped tarragon, parsley and green onions

Drizzle the dressing over the potatoes, mix gently and let stand at least one hour for best flavor.
