Making candied or caramelized nuts is easy.
These go well in the Spinach Sweet Potato Salad
Recipe makes 1 ½ cups nuts with a total calorie count of 2030 and 27.6 grams protein.
½ cup brown sugar
1 ½ cups walnuts (or any nuts)
Toast the nuts:
Spread nuts on a cookie sheet or similar baking pan in a single layer. Roast the nuts in a 350° oven for five minutes. Check to see if the nuts are toasted by tasting for correct flavor. (Note, if you forget to toast the nuts first, you can still toast them after they are coated with the sugar syrup. Follow the same procedure in either case.)
Add the sugar to a heavy pan over high heat and stir constantly while the sugar melts. Add a little water if desired to prevent scorching as the sugar melts.
Once the sugar is melted and boiling, add the nuts and stir to coat evenly with the sugar syrup.
Dump the coated into a pan or bowl to cool. Stir while cooling to prevent the nuts from sticking together.
These caramelized nuts go great in any salad.
