Spinach Sweet Potato Salad

½ pound sweet potatoes
½ pound spinach
1 T or so balsamic vinegar
1/3 cup dried cranberries
4 ounces feta cheese (crumbled)
½ cup caramelized walnuts


Bake the sweet potatoes at 350° until tender, but not mushy. Let cool. Peel off the skins and slice into pieces the size of a quarter coin.

Place the spinach in a bowl and sprinkle with balsamic vinegar.

Add the potatoes, cranberries, walnuts, feta cheese and toss.
